Winter Bliss Coconut Bowl

I know winter means comfort foods and that can potentially lead you to make some not so wise decisions. But fear not, today I will show you how to create a warm and healthy coconut bowl that will help keep your glow all winter

The Winter Bliss Bowl is a satisfying, flavorful alternative to a salad from the fridge in winter.

Ingredients

  • 2 tbsp Coconut Oil
  • 4 tsp Cumin
  • 3 tps Honey
  • 2 Carrots
  • 2 Sweet Potatoes
  • 1 Head Cauliflower
  • 1 Garlic
  • 1 cup Red cabbage
  • 2 cups Spinach
Method
Heat oven to 180º. Toss cauliflower, sweet potatoes, carrot with coconut oil, garlic and 3 tbsp of honey. Sprinkle with cayenne ans season generously with salt and pepper. Spread on a baking sheet and roast until tender, about 25-30 minutes.

In a small fry-pan, heat 2 tbsp's honey, red cabbage, spinach and ginger together. Stir constantly, until honey begins to bubble and seeds turn light golden brown. 

Finish with fresh lettuce and add all the ingredients to your coconut bowl to enjoy immediately.
