Did you know avocados first arrived in Australia in 1840 in seed form? They were planted in the Royal Botanical Gardens in Sydney. Imports of seeds and plants continued over the next 110 years.
Ingredients:
- 1 packet of Spaghetti
- 2 avocados
- Bunch of fresh basil leaves
- 2 cloves garlic
- 1 cup cherry tomatoes
- 2 tablespoons freshly squeezed lemon juice
- Olive oil
- 1 cup cherry tomatoes
- Salt and freshly ground black pepper
- In a large pot of boiling salted water, cook the pasta.
- To make the avocado sauce, combine avocados, basil, garlic and lemon juice in the bowl of a food processor. With the motor running, add olive oil in a slow stream and season with salt and pepper to taste.
- Combine pasta, avocado sauce and cherry tomatoes.
- Serve immediately in your coconut bowl.
