Pumpkin Pie Smoothie
This Pumpkin Pie Smoothie is a super easy way to power you through the first half of the day, and is loaded with antioxidants, protein, healthy fats and fibre which makes this a complete healthy meal for breakfast or a quick lunch.
Who says vegan pumpkin pie needs to be hard? I say smoothie-ify it and enjoy all your favourite pumpkin pie flavours without the hard work. This pumpkin smoothie is so easy to make with just 6 healthy vegan ingredients.
- 1 cup pumpkin puree
- 1 medium banana, frozen
- 1 Tbsp honey
- 1/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1 cup vanilla soy milk
- ½ cup crushed ice
- Add everything to your blender and give it a whiz.
- Blend until smooth. You may need to stop to stir once or twice. If the smoothie is too thick, add a touch more soy milk.
- Pour into coconut cup and sip sustainably with a bamboo straw.
This recipe is perfect for when you want that pumpkin pie flavour without turning your oven on!
Smoothie Tip: I recommend you always have some frozen bananas on hand, that way you can make all sorts of awesome smoothies. Whenever you have ripe bananas on hand, peel them, break them into quarters and freeze them in a freezer bag. That way you are always set for any smoothie craving that comes your way.
If you don’t have pumpkin pie spice, you can use the following: ½ teaspoon ground cinnamon, ¼ teaspoon ground cloves, ¼ teaspoon ground nutmeg.
