In this recipe, we'll show you how to make a delicious Mediterranean zucchini pasta that's loaded with vegetables and bursting with flavour.


Ingredients:

  • 1 pack of spaghetti
  • 2 medium-sized zucchinis, sliced into thin rounds
  • 1/2 cup of Kalamata olives, pitted and chopped
  • 1/4 cup of capers, drained
  • 4 cloves of garlic, minced
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped fresh basil
  • 1/4 cup of extra-virgin olive oil
  • 1/4 teaspoon of red pepper flakes
  • Salt and black pepper to taste


Instructions:

  1. Start by cooking the spaghetti according to the package instructions until it's al dente.

  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

  3. Add the sliced zucchini, garlic, red pepper flakes, and a pinch of salt and black pepper to the skillet.

  4. Cook the zucchini for 5-7 minutes, or until it's tender and slightly browned.

  5. Add the chopped Kalamata olives, capers, parsley, and basil to the skillet and cook for an additional 2-3 minutes.

  6. Once the pasta is cooked, drain it and add it to the skillet with the zucchini mixture.

  7. Toss the pasta and vegetables together until they're well combined.

  8. Serve the Mediterranean zucchini pasta with a sprinkle of Parmesan cheese and a drizzle of olive oil, if desired.
