When it comes to spring time salads for your coconut bowl, this one is extra special. The mandarins give it a burst of freshness while the Parmesan cheese gives it a bite of sharpness and nuttiness.

INGREDIENTS
- 2 mandarins
- 100g Parmesan cheese
- 1 large red capsicum
- 1 large carrot
- 1 cucumber
- 3 shallots
- Handful of sliced pecans
- 1 tablespoon sesame seeds
- 1 radish
DRESSING
- 1 1/2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 2 teaspoons honey
- 3cm piece fresh ginger, finely grated
METHOD
- Whisk the dressing ingredients in a small bowl until well combined.
- Place the remaining ingredients into your coconut bowl. Drizzle with the dressing and toss gently with your coconut wood spoon to combine.
