Mandarin Salad Coconut Bowl Recipes

When it comes to spring time salads for your coconut bowl, this one is extra special. The mandarins give it a burst of freshness while the Parmesan cheese gives it a bite of sharpness and nuttiness.

Fresh and healthy this is a great salad to enjoy over lunch or even an afternoon snack.


  • 2 mandarins 
  • 100g Parmesan cheese
  • 1 large red capsicum
  • 1 large carrot
  • 1 cucumber
  • 3 shallots
  • Handful of sliced pecans
  • 1 tablespoon sesame seeds
  • 1 radish


  • 1 1/2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons honey
  • 3cm piece fresh ginger, finely grated


  1. Whisk the dressing ingredients in a small bowl until well combined.
  2. Place the remaining ingredients into your coconut bowl. Drizzle with the dressing and toss gently with your coconut wood spoon to combine.
