Try this coconut bowl lamington smoothie recipe with an Australian flavour twist. It’s Chocolately, it’s coco-nutty and even has a delightful cakey flavour too.

Did you know the lamington was first invented in Queensland, with a recipe appearing in the Queensland Country Life newspaper as early as 1900.

INGREDIENTS

  • 1 cup Cashews
  • 1/2 cup Quinoa Flakes
  • 1/2 cup Shredded Coconut
  • 1 tsp Cacao Nibs
  • 1 tsp Cocoa
  • 1/4 cups Coconut Water
  • 4 Ice Cubes

TOPPINGS

  • Raspberries
  • Coconut Flakes
  • Cacao nibs

METHOD

  1. Add all ingredients to a high speed blender and blend until smooth.
  2. Pour finished smoothie into your coconut bowl and add all the toppings!
  3. Make sure you add frozen raspberries, coconut flakes and cacao nibs for that lamington taste.
