This Mediterranean Salad comes together with just a handful of ingredients for an easy chopped vegetable salad.
This great salad recipe works as a side dish but also makes a great full meal.
The fresh veggies are rich in nutrients, and the feta cheese adds calcium. It’s important to mention that the olives, while a good source of fibre, iron and copper - have a high salt content, so consume them in moderation.
If you want to add more protein, toss in lean grilled chicken or fresh calamari.
DRESSING
Greek Vinaigrette: In a small bowl, whisk the olive oil, garlic, lemon juice, salt, and pepper to make the dressing.
INGREDIENTS
- Cucumbers
- Cherry Tomatoes
- Kalamata Olives
- Red Onion
- Feta Cheese
METHOD
- Combine all of your salad ingredients in a large mixing bowl.
- Drizzle evenly with the dressing and toss until combined.
- Top with fresh parsley.
- Enjoy immediately in your coconut bowl and dig in your a coconut fork.
You can keep this Mediterranean salad in the refrigerator for three to four days, which makes it a perfect meal prep solution.
Since there isn’t any lettuce in this salad, you don’t have to worry about it getting soggy with the dressing. The dressing “marinates” the salad is actually makes it taste even better the next day!
Top Tip: You can even use our long handled wooden spoons to serve this salad.
