  • 1 cup dry couscous
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 small red onion, diced
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste


  1. Cook couscous according to package instructions and let cool.
  2. In a large bowl, combine cooked couscous, chickpeas, red bell pepper, cucumber, red onion, parsley, and mint.
  3. In a separate small bowl, whisk together lemon juice, olive oil, honey, salt, and pepper.
