Vegan recipe ideas are plant-based, healthy and simple to create at home! Using your own coconut bowls and coconut cutlery, you can create a plastic-free meal any time of the day. With so much interest being generated around ‘plant-based diets’ and ‘the vegan lifestyle’ it has become a goal for many to add more fruit and vegetables to their meals.

What does it mean to be ‘vegan’? The UK Vegan Society (1988) decided to define veganism as “a way of living which seeks to exclude, as far as is possible, all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose”. Whilst veganism is certainly considered to be a trending topic it is important to remember that we can all do our part when it comes to making more sustainable choices for our planet and our own health. #1 Vietnamese Rice Noodle Salad with Tofu (Bun Chay)

What you will need:

Salad Dressing

  • ¼ Cup of Rice Vinegar
  • 2 Tablespoons of Lemon or Lime Juice
  • 2 Tablespoons of Coconut Sugar
  • 2 Tablespoons of Soy Sauce
  • 1 Tablespoon of Grated Lemongrass
  • 1-2 Cloves of Grated Garlic
  • 1 Tablespoon of Water

Salad

  • Thin Rice Noodles
  • Carrots
  • Capsicum
  • Cucumber
  • Tofu

Herbs & Garnish

  • Mint Leaves
  • Coriander Leaves
  • Crushed Peanuts

To make this salad it is best to prepare everything and then create the bowl right before serving. Simply mix the salad dressing together until everything is well combined and adjust the taste to your personal preference e.g. less sugar or more salt.

Next, slice the fresh vegetables and assemble them in your coconut bowl. Prepare the rice noodles by following the instructions on the packet which will usually require you to place them into boiling water and wait for them to soften. Once cooled, mix the salad, noodles and dressing together.

Pan-fry the tofu until golden brown and place on top of the salad and add herbs and garnish. This style of salad is so light and healthy and looks amazing served in a natural coconut bowl.

Coconut Bowl Laksa

What you will need:

  • Vegan Laksa Paste or Thai Red Curry Paste
  • Vegetable Broth
  • Water
  • Flat Rice Noodles
  • Green Asian Vegetables
  • Bean Sprouts
  • 1 Can of Coconut Milk

This take on a Malaysian style Laksa is meant to be a very simple meal to create with a pre-bought laksa paste. When you are ready to start cooking the laksa start by adding some oil to a pan and lightly frying off the laksa paste.

Add the vegetable stock and water to create the desired amount of liquid and then add the coconut milk. Once the broth has boiled for 20 minutes it is ready to serve. You can add additional herbs and spices such as fresh ginger, lemongrass or chilli depending on your preference.

Place the rice noodles, chopped tofu and chopped vegetables into your coconut bowl and pour over the laksa broth.                                      

Frozen Banana Coconut Bowl

#3 Frozen Banana Bowl

What you will need:

  • Frozen Bananas
  • 1-2 Tablespoons of Almond or Coconut Milk
  • 2 Tablespoons of Organic Peanut Butter

Break the frozen bananas into small sections and place them into the food processor and add roughly 2 tablespoons of peanut butter. Add a splash of coconut or almond milk to help the mixture blend together smoothly.

This recipe is almost too good to be true as it is so easy and delicious! Enjoy the vegan ice cream in your coconut bowl. The leftover crumble can be enjoyed cold the following day for breakfast.

What you will need:

  • 2 Ripe Avocados
  • 2 Tablespoons of Lemon or Lime Juice
  • 2 Cloves of Garlic
  • ¼ Teaspoon of Salt
  • 2 Tomatoes

This is such a popular and delicious dip for any occasion so you can be sure this will look amazing in your coconut bowl. Mash the avocados, season, add chopped tomatoes and garlic. Serve fresh guacamole with sliced carrots, celery or organic corn chips. Add guacamole as a side to your next plant-based meal.

Dark Chocolate Mousse coconut bowl

#5 Avocado and Dark Chocolate Mousse bowl 

What you will need:

  • 1 Ripe Avocado
  • 4 Dates (Pitted & Soaked)
  • ¼ Cup of Raw Cacao Powder
  • ¼ Cup of Almond Milk
  • Pinch of Salt

Add the ingredients into a food processor and mix until smooth and creamy. Serve cold in a coconut bowl and top with grated vegan dark chocolate. This dessert is plant-based and healthy so you can enjoy it any time of the day or serve it at your next dinner party.
